Recipe: Chicken Spaghetti
This is what I had for lunch today! I used cream of mushroom soup instead of cream of chicken, and also added half an onion.
Fun Fact: You can shred chicken with a mixer! Who knew?!

We have this aeroponics system and our herbs have been growing out of control! Besides making mojitos, I really didn’t know what to do with the mint that we had, so I googled and found these two recipes that are so delicious. The mint really added a lot of flavor and I was pleasantly surprised by how refreshing it was.

We also have made this with eggplant (made the same way)… Andrew likes the eggplant better, but I have no preference because it all tastes like delicious pizza!
I used turkey pepperonis and reduced fat cheese! #healthy
I put the sauce and seasoning on first (left side), then put the pepperonis on top (right side).

Last week, my company hosted this big conference downtown. My favorite thing about it is the fact that I get to dress up in my suit for the days that I was there! I should start wearing suits all the time because I feel so sophisticated and empowered.

Recipe: Mac and Cheese Muffins
It’s Mac and Cheese… and it’s delicious.
Two tips that I find helpful:
1 – Use cupcake liners with this, that way you won’t risk anything sticking to the pan! (I really hate cleaning up stuff stuck to the pan.)
2 – Make sure you cool it thoroughly. Because I have no will power, I usually eat it right out of the oven and it completely falls apart. So if you can wait…
Bacon Makin’: Christine came up with the idea to make homemade bacon, so I hopped on board and decided to do it too. It was actually a lot easier than what I expected after reading the instructions. It was a little salty, but overall, I think it turned out really well, especially for this being the first time we tried it!
